Cowboy French Toast

This is so dawg gone easy. I’m tellin’ ya, it as easy as “shootin fish in a tub!”

All you need is butter, eggs and bread. You can use any variety of bread- 7 grain, wholewheat, multigrain, you get the idea. I always like to keep it simple- white bread, farm eggs, and genuine butter.

Heat your skillet or griddle. Melt a couple pats of butter. While the butter is melting cut a hole about the size of the egg yolk in the center of your bread. Place your bread on the griddle, let it begin to toast. Then drop an egg in the hole of the bread.

SUGAR! I hate when that happens. Oh well. Look at the color of that yolk-Orange! No sissy lemon yellow yolks around here. That would have been our top side had I not flipped just a little too soon. With this recipe the top is always prettier than the bottom. Here’s the bottom.

Okay, this morning I really was in a hurry I have intentionally goofed this batch of French toast, just to share what can go wrong with this recipe. Yeah, that’s it.

As you can see with the bottom side I didn’t let it toast quite long enough. Just don’t break your yolk or under/over toast and it will look a whole lot better than these photographs.

Heck, even when I loose it in presentation, it still eats grrreeeaaattt! Yep, easy as a bowl of cereal but a whole lot better.

That looks good!! I love eggs on my toast, so I bet I will love eggs in my toast!! Yum!! My husband calls lunch “dinner” and dinner “supper”. I just say lunch and dinner. Dang Yankee in me!! :) I had a lot to learn with the cajun lingo here!! :) It’s been fun!

I would eat that, but nobody would want to watch me, because I can’t eat runny yolks — not even a tiny bit. I know, I know, what the heck kind of farm girl AM I, right? But if it’s Over Dead, I scarf ‘em up, just like the rest of you. Thanks for the idea — my kids will love it!

Mmmmmm I have to agree with Laurie, runny yolks disgust me. How bout if we are real careful we could maybe pop the yolk after they set real good. I will try it tomorrow!

Ha-ha, Ho-ho, Hee-hee! For you, anti- yolks just drop the egg in the hole upon placing the bread on the griddle it will cook long enough to be a solid yolk.

Which is comparable to eating cardboard in my book. It sends me flying to the cupboard for Butter Pecan syrup on top of my french toast when I overcook my eggs.

My Dad used to make this when we were growing up and he called it a “One Eyed Pete” – we had them often and my kids looove them today!

My husband was going to make a fried egg and toast for our 1st-grader this morning. I asked her if she wouldn’t rather try Cowboy French Toast, a recipe from a real cowgirl in Texas? Daddy liked how easy it was to make — one pan, no toaster. Smedley scarfed it right up. Thanks, Ang!
