In the south sweet potatoes are abundant this time of year. The “Basketeers” have received enough potatoes the last few weeks to make pies, candied sweet potatoes, fries and this biscuit recipe.

I baked these the other day to serve with my chicken and dumplings, they didn’t last long. It’s a wonderful biscuit recipe for any day but especially for Thanksgiving day, for surprisingly its a biscuit that is better cold than straight from the oven.

The sweet potato flavor is light and therefore the biscuit is better enjoyed with honey or butter rather than jam. It has a texture combination of a biscuit and a scone, maybe I should rename it to a “Biscone.” (I love to make up words!)

OK, this post is OK but Thelma’s Demise still has me rolling. It is always refreshing to find another person who doesn’t take themselves too seriously. It is unfortunate that Thelma did not become a pie but look at the good she did serve!
